Baking Powder Biscuits

My Mother made these whenever we ran out of bread. It makes a nice change from the same old sandwiches. One of my aunts uses her cookie cutters, so she never has to have a round biscuit.
Preheat oven to 450 F. Mix together flour, baking powder and salt. Add margarine. Cut in with a pastry blender or two knives, until pieces are smaller than peas. Add milk all at once. Stir just until mixed. Knead on a lightly floured surface 3 or 4 times. Roll out 3/4 inch thick. Cut with cookie cutters, a floured glass, or a knife and place biscuits on an ungreased cookie sheet. Bake 10 to 14 minutes. DO NOT OVER COOK. Serve with butter and jam, alone or with any meal.
Cheese Biscuits
Reduce salt to 3/4 teaspoon. Add 3/4 cup cheese.
Buttermilk Biscuits
Use buttermilk in place of milk.
Whole Wheat Biscuits
Use half white flour and half whole wheat flour.
NOTE:
If you over mix (or knead too much) the biscuits will be tough. Leftovers warm up nicely in a microwave.-- Rox
