Gooseberry Whip

Ingredients
Puree gooseberries in a blender or food processor. Rub through a sieve. Add granulated sugar. Whip the cream, and stir into the gooseberry mixture.
Melt the margarine in a frying pan. Add nuts and breadcrumbs. Fry until toasted and golden brown. Remove from heat. Add brown sugar.
Put a layer of gooseberry mixture in a glass serving dish, followed by a layer of crumb mixture. Use about half of each mixture per layer. Chill until ready to serve.
Gooseberries are quite tart. You may want to taste and adjust the sugar before assembling the dessert.
Put the gooseberries in a saucepan with 1 tablespoon of water. Cover and cook for about 15 minutes, until soft. Cool.
NOTE:
You can also layer the dessert in individual serving glasses, which makes a very attractive display.-- Rox
