Scalloped Potatoes

Ingredients
Melt butter in a saucepan. Add flour, and cook 2 minutes over medium heat. Add salt and milk. Bring to a boil and add parsley flakes. Pour sauce over potatoes. Sprinkle remaining cheese over top of casserole. Use more, if desired. Bake 1 to 1 1/2 hours, until potatoes are tender.
Serve as a side dish, or add a layer of pork chops or ham to make a main course.
Preheat oven to 350 F. Peel and thinly slice potatoes. Put half of the potatoes into a large casserole dish. Sprinkle on onions. Add meat, if using, and 1 cup grated cheese. Put the rest of the potatoes in the dish.
