Shortbread
Recipe file created November 6, 1999. Almond Shortbread
This is my favourite.
These may be made with real butter, or margarine.
Combine margarine and sugar. Blend thoroughly. Stir in cornstarch and flour. If necessary, chill dough for easier handling. Heat oven to 325 F. Shape dough into 3/4 inch balls. Place 2 inches apart on ungreased cookie sheet. Bake 10 to 12 minutes.
Make dough as above. Press half of dough into ungreased 8 inch square pan. Roll almond paste to fit in pan. Place on first layer of dough. Cover with remaining dough. Bake in 325 F oven for 20 to 25 minutes. Cut while still warm to minimize crumbs.
