Yorkshire Pudding

Ingredients
Turn oven on to 400 F. Put 1 tablespoon oil in 8 inch square pan, or divide between 12 muffin tins. Place in oven while it is still heating. Combine all other ingredients in a mixing bowl. Beat until the oven has reached baking temperature, 5 to 10 minutes. The longer the batter is beaten, the better this recipe turns out. Pour batter into hot pan and immediately return to oven. Bake 15 minutes or 10 minutes if using muffin tins. Reduce heat to 350 F and bake a further 15 minutes. Serve hot with butter or gravy.
Pigs In Blankets
Brown a package of sausages in a frying pan. Set aside. Proceed as above, placing sausages in pan before pouring in the batter.
Clafouti
Prepare one to two cups of fruit (mixed or all one type): Peel and slice apples or pears, pit or drain cherries, slice plums or apricots. Add 1/4 cup sugar to batter recipe above before beating. Stir in fruit. Pour mixture in to hot 8 inch baking pan. Bake as for Yorkshire Pudding.
An excellent side dish with any meat.
NOTE:
It is very important that the batter is beaten sufficiently. If you have time, mix the batter ahead of time and let it sit in the fridge for several hours. Then beat it again before baking.If this is baked in a single pan, you will get a moist, creamy bread. When baked in muffin tins, the result is an airy, slightly crusty bread.
